Description

These delightful Cheesecake Bites feature a creamy strawberry-infused filling nestled in a buttery Golden Oreo crust, topped with a crunchy strawberry-flavored topping. Perfectly portioned for parties or a sweet treat, they combine a no-bake option and a baked method for versatile enjoyment.

Ingredients

Crust

  • 2 cups Golden Oreo cookies, crushed
  • 5 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar

Filling

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • ½ cup sour cream
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp lemon juice (optional)
  • 1 cup diced fresh strawberries or ¼ cup strawberry puree

Crunch Topping

  • 20 Golden Oreos, crushed
  • 1 (3 oz) box strawberry gelatin mix or freeze-dried strawberry powder
  • 4 tbsp unsalted butter, melted

For Garnish

  • Whipped cream
  • Fresh strawberries, halved
  • White chocolate drizzle

Instructions

  1. Prepare the Crust: Crush the Golden Oreo cookies and combine them with melted butter and granulated sugar. Press this mixture firmly into cupcake liners or a mini muffin pan to form the crust layer. Bake at 325°F (160°C) for 8–10 minutes to set or choose to chill for 30 minutes for a no-bake version.
  2. Make the Filling: Beat the softened cream cheese with sugar until smooth and creamy. Add sour cream, eggs, vanilla extract, and optional lemon juice, mixing well until fully incorporated. Gently fold in the diced fresh strawberries or strawberry puree for flavor. Spoon this filling over the crusts and bake at 325°F (160°C) for 20–25 minutes until just set. Allow the cheesecakes to cool completely to room temperature, then chill in the refrigerator.
  3. Make the Crunch Topping: Crush the remaining Golden Oreos and mix them with strawberry gelatin mix or freeze-dried strawberry powder and melted butter. Bake this crumb topping at 350°F (175°C) for 5 minutes to crisp or allow to air-dry if opting for the no-bake method.
  4. Assemble: Once the cheesecake bites are chilled and firm, coat the tops with the strawberry crunch topping for added texture and flavor. Garnish each bite with whipped cream, fresh halved strawberries, and a drizzle of melted white chocolate for an elegant finish.

Notes

  • For a no-bake crust and topping, simply chill the crust mixture and air-dry the topping instead of baking.
  • Room temperature eggs and cream cheese help achieve a smoother filling texture.
  • Use fresh or frozen strawberries depending on availability; puree for extra strawberry flavor in the filling.
  • Golden Oreos provide a mild, vanilla-flavored crust different from traditional chocolate cookie crusts.
  • Store cheesecake bites refrigerated and consume within 3-4 days for best freshness.
